A Wellness Beef Recipe

Beef Skirt Steak Fajitas Yeap, this is a healthy recipe and it tastes great too.....

Beef Skirt Steak Fajitas

Prep Time: 45 minutes
Cook Time: 20 minutes
Serves: 6

  • zest and juice of one Farmers Market lime
  • 5 tbsp Farmers Market cilantro, chopped
  • 2 garlic Farmers Market cloves, sliced
  • 1 tsp tomato paste
  • 1 Tbsp chili powder
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp brown sugar
  • 1 ½ lbs beef skirt steak
Mix all ingredients in a bowl and rub on the skirt steak. Let marinate 24 - 48 hours.

Pepper Mix

  • 2 Farmers Market red peppers, julienne
  • 1 Farmers Market green pepper, julienne
  • 1 Farmers Market red onion, julienne
  • 1 bay leaf
  • 4 tbsp extra virgin olive oil
  • 1 tbsp Farmers Market garlic, chopped
  • 2 tbsp chili powder
  • 12 Farmers Market cherry tomatoes, cut in 1/2
Over medium heat saute’ onion and peppers in oil. When soft add garlic and chili powder. Cook 1 minute. Add tomato and cook 3 minutes until soft. Reserve and reheat when serving.

Tortillas

12 7” flour tortillas

Wrap the tortillas in aluminum foil. Heat in a 350* oven for 10 - 15 minutes. Serve immediately.
